HEALTHY BANANA OAT BREAD

Healthy Banana Oat Bread

I’m all about healthy breads these days… and I’m kind of surprised by it. I never considered myself really into baking, but healthy breads have become a real treat for me, so I’ve enjoyed making and trying different ones. I always stick to using oat flour, so it’s been fun creating different types of oat flour breads (I have a lemon one coming soon and it’s so good), I think the next thing I’ll try is almond flour or almond meal… I’m not even sure what the difference is between flour and meal, haha. Anyways, today I’m sharing a really yummy banana oat bread. It’s so good and so healthy, plus it has chocolate chips for a little added treat.

This banana oat bread is absolutely perfect if you’re looking for a healthy alternative, but still craving a little something sweet and carby (it’s carby a word? 😜) The oat flour makes it dense, so it’s filling, but it’s sweetened with banana and honey so you won’t crash afterword or feel gross.

My favorite thing about this bread is that it’s super easy to whip up and can be made in a single bowl. You just mix your wet ingredients first;

  • Bananas

  • Eggs

  • Honey

  • Greek yogurt

  • Coconut oil

Once you’ve whipped your wet ingredients, all that’s left is your dry ingredients.

  • Oat Flour (For the oat flour I use regular rolled oats and blend them in a blender. It’s super easy and now I use oat flour for everything.

  • Cinnamon

  • Baking powder

Lastly, I fold in the chocolate chips and chopped walnuts. Super easy, I love it.

HEALTHY BANANA OAT BREAD

WET INGREDIENTS:

  • 2 Bananas

  • 2 eggs

  • 2 Tbsp of honey

  • 1/4 cup of coconut oil

  • 1/2 cup of greek yogurt

DRY INGREDIENTS:

  • 2 cups of oat flour (blend whole oats in blender)

  • 3 tsp of baking powder

  • 1/2 tsp of ground cinnamon

  • 1 cup of chocolate chips (optional)

  • 1 cup of chopped walnuts (optional)

INSTRUCTIONS

  • Preheat oven to 325 (F) and grease 9x5 inch loaf pan.

  • In medium bowl mix together wet ingredients, mash banana first.

  • Once wet ingredients are combined, add dry ingredients.

  • Fold in chocolate chips.

  • Fold in chopped walnuts.

  • Pour batter into greased loaf pan and sprinkler with chocolate chips and chopped walnuts.

  • Bake for 55 to 60 minutes, or until top is lightly golden and toothpick inserted into the center comes out clean. Let bread cool in pan on cooling rack.

ONE-BOWL HEALTHY BANANA MUFFINS

I’m all about making muffins these days. I had been making this banana oat bake for a while, which I was loving, but I really wanted something a little more fluffy and something that was really easy to grab and go. I also love having something that is great for snacking too. I also really love anything that has banana in it because I’ll take all the potassium I can get, it’s so good for your muscles.

These muffins are so good and healthy. My favorite thing is that they are naturally sweetened with honey and for fun I add chocolate chips! Although I’m thinking about making these with blueberries next time too.

My favorite thing about these muffins is that they are super easy to whip up and can be made in a single bowl. You just mix your wet ingredients first; bananas, eggs, peanut butter, honey, vanilla extract, and coconut milk. If you don’t have coconut milk, you can also use almond milk, or regular milk. Once you’ve whipped your wet ingredients, all that’s left is your dry ingredients. For the oat flour I use regular rolled oats and blend them in a blender. It’s so super easy and now I use oat flour for everything. I don’t even keep traditional white flour in the house anymore. Once you’ve added the oat flour, baking powder and cinnamon, mix all together. Lastly, fold in the chocolate chips and chopped walnuts. Super easy, I love it.

EASY ONE-BOWL HEALTHY BANANA MUFFINS

WET INGREDIENTS:

  • 2 Bananas

  • 2 eggs

  • 1/3 cups creamy peanut butter

  • 2 Tbsp of honey

  • 1/2 tsp vanilla extract

  • 1/2 cup of unsweetened coconut milk

DRY INGREDIENTS:

  • 2 cups of oat flour (blend whole outs in blender)

  • 3 tsp of baking powder

  • 1/2 tsp of ground cinnamon

  • 1 cup of chocolate chips (optional)

  • 1 cup of chopped walnuts (optional)

INSTRUCTIONS

  • Preheat oven to 400º (F). Line muffin tin with paper liners.

  • In medium bowl mix together wet ingredients.

  • Once wet ingredients are combined, add dry ingredients.

  • Fold in chocolate chips.

  • Fold in chopped walnuts.

  • Fill muffin liners with batter, filling each almost to the top.

  • Bake for 15 to 18 minutes, or until tops are lightly golden brown. Check by inserting a toothpick in the middle, if it comes out clean or with a few moist crumbs, they are good to go. Cool muffins in tin for at least 5 minutes, then transfer to cooling rack. Let muffins cool for a smidge or the bottoms get stuck.

HEALTHY CHOCOLATE BANANA MUFFINS

I made muffins! So, I really like making muffins and breads for breakfast. Probably because I limit eating starches in the evening and I like bread. For the last few years I’ve been changing things up in regards to how I bake. I try to stay away from traditional flour and sugar, so I primarily bake with oat flour (I just blend up whole oats in the blender) and I use honey as a sweetener. I have found some really fun breads and muffins that I now bake on the regular with oat flour and honey. I also like to keep things simple in the kitchen, so I don’t go crazy with trying lots of different flour alternatives (at least not right now) we almost always have oats, so that’s what I use.

Today, I’m sharing a super fun chocolate banana muffin and you can eat it guilt free because it’s on the healthier side and tastes amazing! Let’s get to it!

HEALTHY CHOCOLATE BANANA MUFFINS

WET INGREDIENTS:

  • 2 Bananas

  • 2 eggs

  • 2 Tbsp of honey

  • 1/2 tsp vanilla extract

  • 3/4 cup of greek yogurt

  • 1/4 cup of coconut oil

DRY INGREDIENTS:

  • 2 cups of oat flour

  • 3 Tbsp of cocoa powder

  • 3 tsp of baking powder

  • 1 tsp of baking soda

  • 1/2 tsp of ground cinnamon

  • 1 cup of chocolate chips

INSTRUCTIONS

  • Preheat oven to 400º (F). Line muffin tin with paper liners.

  • In medium bowl mix together wet ingredients, except for the coconut oil. Save that for later.

  • Once wet ingredients are combined, add dry ingredients, except for chocolate chips. Save those for later.

  • Fold in melted coconut oil, mix until just combined.

  • Fold in chocolate chips.

  • Fill muffin liners with batter, filling each almost to the top.

  • Bake for 18 minutes, or until tops are lightly golden brown. Check by inserting a toothpick in the middle, if it comes out clean or with a few moist crumbs, they are good to go. Cool muffins in tin for at least 5 minutes, then transfer to cooling rack. Let muffins cool for a smidge or the bottoms get stuck.

STYLE CHALLENGE RECAP SEVEN

Okay, it’s been a while since I’ve done one of these recaps. If you have been wondering if I am still doing this style challenge, I am! :) It’s just super slow, mostly because I feel like it rained almost every day in December and January… so that was fun. 😏 And when it rains like that it is super hard to take outfit photos, so it’s been a bit sporadic, but I’m still here. This recap is a mash up of styled outfits and flatlays. The flatlays have been super fun and I finally have been able to style some shorts! Not because it’s warm out, but because I went to the gym and I’ve been putting together outfits for Maui, which has been super fun!

These joggers are great for workouts too! I’ve run in them, done HIIT workouts, done cross training, and strength training. I love them! I paired it with my favorite Under Armour muscle tank.

I’m starting to put together outfits for Maui to see what I like! This has been fun. I picked up these shorts from a place called Winners, it’s basically the same thing as TJ Maxx and I paired it with this AE top that’s one of my favorites.
